Easy Chocolate Eclairs with Ganache Frosting from Dove Originals Trims

I love to cook, and I love to share my recipes. This is a dessert that I make frequently. It's a favorite in my family, very easy, and simply delicious.
Easy and Delicious Chocolate Eclairs
* One sheet of frozen Pepperidge Farms puff pastry
* One package instant vanilla pudding
* 1 cup cold milk
* 2 cups Coolwhip
* 1 cup chocolate chips (I prefer Nestles.)
* 1/2 cup cream
Preheat your over to 400 degrees. Thaw the sheet of puff pastry slightly while the oven preheats. Open it up flat and divide into three strips along the fold lines. Then divide each strip into thirds. Bake the 9 puffs, following label directions, until golden brown. Move to a rack and cool.
While the puffs are cooling, whisk the cup of cold milk and the package of instant vanilla pudding until well mixed and thickened. Then stir in the 2 cups of Coolwhip, mixing well. Chill for about 15 minutes to allow the pudding mix time to firm up.
When the puffs are cooled and the pudding mix has thickened, pull each puff in half and fill, dividing the pudding mix equally between each puff. Put the tops back on and return to the refrigerator.
Lastly, make the ganache. In a small saucepan, mix the chocolate chips and the cream and heat just until the chocolate is melted. Remove from the heat and continue stirring until the chocolate is smooth. (The entire process takes about 2 minutes.) Cool slightly. Pour the ganache over the top of each pastry letting some drip down the sides. Refrigerate. The ganache will firm up as it cools. Serves 9 people.
Incidentally, ganache is a great topping for Boston Cream Pie. Add a bit more cream and you have a quick and easy topping for ice cream. Pour some over sliced pound cake, add a dollop of whip cream and/or ice cream and a cherry for a very fast desert. Enjoy!
